Beans by Sister Douglass

Here are some notes and recipes for using beans from our last Relief Society meeting:

Cooking Beans (any kind)
• Sort and wash beans--no more than about 1 pound of beans for a large pot
• Put beans in a large pot and add 3-4 cups of water per cup of beans
• Bring to a boil and boil lightly for 2 - 2 1/2 hours, adding more water as needed
• When beans are soft, add salt to taste

Basic Refried Beans
• Fry chopped onion in oil to give the beans a nice flavor
• Add beans by spooning out of cooking pot with a slotted spoon
• Fry a little while and mash with a potato masher or the bottom of a plastic cup
• Add broth from the cooking pot until the beans are the desired consistency
• Serve

Refried Beans with Chorizo (Mexican Sausage)--a spicier and more flavorful refried bean
• Squeeze 1 Chorizo sausage out of casing
• Fry sausage and break into small pieces
• Add beans and mash in w/sausage
• Add bean broth until the beans are a consistency you like
• Serve

Refried Beans with Corn Tortillas
• Heat corn tortillas wrapped in paper towels in the microwave for a few seconds
• Add more bean broth to the refried beans until the mixture is quite thin
• Soak tortilla in the thinned refried beans for 30 seconds to 1 minute
• Place a little thinned refried beans inside the tortilla, fold in thirds, put on a plate
• Sprinkle with Queso Fresco (a white crumbly Mexican cheese) or some other cheese of your choice, then add a dollop of sour cream
• Serve

Soup Beans
4 cups of cooked beans
2 cloves
1/4 tsp. cinnamon
3 peppercorns
1/4 tsp. dried oregano
3 large sprigs of thyme or 1/8 tsp dried thyme
3 Tbs. Vegetable oil
1/2 medium white onion (finely chopped)
salt to taste
Queso fresco, fresh Parmesan
• Put 1/2 cup beans and their broth in the blender, add cloves, cinnamon, peppercorns, and thyme and blend until smooth.
• Heat oil in a skillet, add onion, and fry gently.
• Add the pureed beans and cook over medium heat for 5 minutes.
• Puree the rest of the beans and gradually add them to the pan with 1 cup of water.
• Add salt and bring to a simmer.
• To serve, put 1 cup of soup into a bowl add 1 fried or poached egg, cheese and croutons.

White Bean Recipe

2 Tbs. finely chopped white onion
3 oz. Queso fresco, crumbled
• Cook beans with sliced onion, garlic and cilantro in the water for about 2 to 2 1/2 hours until tender
• add salt
• put 1 cup of the bean stock plus 1/2 cup of the beans in a blender, add the peppers torn into pieces, and blend until smooth
• Heat the oil in a skillet, add the chopped onion and cook without browning

Paid Part-Time Job Available

Sister Mary Greenwood, RS President in Columbia 1st ward, has forward this onto us.

All, Lauren Capra, a delightful 80-year old woman from NJ, contacted the Church looking for someone who might help her adult daughter, Cathleen, 3 days a week for 2 hours a day, as she is recuperating from a car accident that has left her using a walker for a time. Neither woman is a member of the Church, but Lauren had a good feeling about Church members and called the mission home looking for a way to locate potential helpers. Cathleen Capra teaches college students M, T and W and needs help coming up the stairs to her 2nd floor apartment when she arrives home at 3:00 and would like some light housekeeping help on those days, with the possibility of also helping her get in and out of the pool and gym on her apartment premises. She does drive so does not need any help in that arena.

She is offering to pay for this help, and will need it for approximately 3 weeks, starting next week.

Summary – helper needed M, T, and W from 3-5 for three weeks. Paid position. Location is 5679 Columbia Road (apartments off of 175 and Columbia Road, near mall). Would be a great position for a college-age student or someone looking for some extra money.

If you are interested, please call Lauren or Catherine at 410-740-4278.

Swim lessons?

Interested in swim lessons for your kids this summer? My sister is coming to spend a few months here before she goes to BYU. She's looking to earn a little money and is fully qualified to teach swim lessons. She's been a life guard as well as swim instructor for a few years at the community center where she has worked. I don't know what her fees are but I'm sure it would be a lot less then what is typically charged. Email me if you are interested and I'll put you in touch with her. If you can bring fabric that day or loan an item, please letus know on the sign-up sheets on Sunday, or email Cheri Meiners directly with an estimate of what you are bringing. (We can use all types of fabrics---heavier fabrics will be used for bags; cottons can be used for the pillowcases. 1 yard of 45" fabric will make one pillowcase, or one laundry bag.)

Scarves for Soldiers

One of our service projects for our March 10th Relief Society Meeting is knitting and crocheting scarves for soldiers. For those of you who are interested in starting one in advance, instructions are in this post. Ask Camille Lund if you have questions.

A few tips:

  • I have been able to find a 100% wool yarn (Lion Brand Yarn, Fishermens's Wool) at JoAnn's and Michael's.
  • An 8 oz. skein of yarn will make one scarf and costs about $9.00 (or you can use a 50% off coupon and get it for $4.50)
  • For crocheting I used a size H crochet hook and did the whole scarf in single crochets.
  • For knitting I am using size 10 needles.

Materials:

  • Any soft, worsted or bulky weight (100 grams/3.5 ounces) wool yarn (lamb’s wool, alpaca, cashmere or combinations of these are acceptable).
  • Colors: ONLY black, charcoal, brown, tan, or combinations of these colors.
  • Only 100% soft wool yarn will be accepted, because our Armed Forces are not allowed to wear synthetic fibers outside the wire.

Finished dimensions: approx. 12 in. x 42 in. No fringe, scallops, or holes big enough to put your little finger through, just plain, as these need to be “unisex”.

Note: Any stitch EXCEPT stockinette stitch if knitting as it curls, so please do not use it.

Cast off. Weave in ends.

It's a Boy!

Andrew Patrick Martin
was born to Nicole and Alan Martin
on Wednesday, Feb. 17.

He was 8 lb. 5 oz. and 21 inches long.

FamilySearch Indexing

Volunteers needed. Work from your own home. Members and non-members are invited to participate in FamilySearch indexing:
http://www.familysearch.org/eng/indexing/frameset_indexing.asp

Using the FamilySearch online indexing system, volunteers from around the world are able to quickly and easily transcribe the records—all from the convenience of their homes. The indexes are then posted for free at familysearch.org. Millions of rolls of microfilm provide census, vital, probate, and church records from over 100 countries for indexing projects. Governments, churches, societies, and commercial companies are also working to make more records available.

You can help by volunteering to index one of the current U.S. census projects or the upcoming England and Wales census projects.

Need: Childcare for one Child

We would like to find a family who is willing to watch a 5-year old girl during the day and provide a comforting environment for her. She is very sweet and is great with babies and other children. We can pay $200 a week for a 9 to 5 schedule. Please let me know if anyone is willing to do this, and I can come meet them and bring her along to see if it would be a good fit.

Thanks!

Help Needed

Our ward has been asked to provide a simple healthy meal for the sister missionaries working at the Temple Visitors Center on Thursday, Dec. 10th. The meal will need to be dropped off there before 3:30 p.m. There is money budgeted for this. We are looking to ask sisters only once every five years to participate in these extra assigned services. Please contact Carolyn Summerhays for details.

Nativity helpers are needed for the 1st Sat. in December at 8 a.m. to set up and the following Monday to take down at 9 a.m. Contact Tess Connell to volunteer.

Best Wishes!!

Rebecca Knudson enters the MTC in Provo, Utah, this Wednesday, heading for Moscow, Russia. We know she'll do a great job and represent the Lord well!

Welcome! Meet & Greet:

We welcome everyone who is officially in the Columbia 2nd Ward. A Meet & Greet has been planned for everyone who is new to come get to know the leaders of the ward. It will be this Friday, Nov. 20th, from 7 - 8:30 p.m. in the Young Women's room (right off the kitchen.)

This will be a great time to get your son signed up for Scouting or just to find out who the members of the bishopric really are, and they are even providing refreshments. Please let your friends know if they weren't given an invitation on Sunday.

Produce Co-op

Some sisters in the Columbia 1st ward are trying to get a produce co-op up and running, modeled after the very successful one that's been in Catonsville for years. They will be hosting the co-op near the intersection of Harper's Farm Rd and 108. They are in need of a few more shares to make it a smooth-running operation.

Do you buy a lot of fresh produce?
If so, the Columbia Produce Co-op is perfect for you!

How much does it cost?
• A full share is $20 per week
• A half share is $10 per week

What are your responsibilities?
• Each Wed you or your partner if you are sharing, pick up your produce at Terri Lin Smith’s garage (off of Harper’s Farm Rd and 108). Produce is ready for pick up by 7:30 AM
• Five times a year, you and your partner will be responsible for choosing and buying the produce from the supplier in Jessup. You will buy the produce early in the morning, bring it to the garage, and have it divided up into each share’s baskets by 7:30 AM.
• Attend one annual meeting to decide what weeks everyone will be buying the produce.

If any families are interested they can contact Dani Gardner or Becky Garcia to get more information.
