30 Minute Meal Recipes

Here is the place to post recipes from the recent recipe swap- 30 Minute Meal Recipes. Feel free to post your recipe even if you weren't able to attend.

  1. Warm Lime Chicken Salad
    (we haven't made the dressing yet or used the raisins and it's still good)

    Dressing: 1 tsp grated lime peel, 1/4C fresh lime juice, 3tbs sugar, 1/2tsp white wine vinegar, 1/4tsp dijon mustard

    Chicken: 2tbs frozen limeade concentrate thawed, 1/4 to 1/2 tsp pepper, 1 lb boneless, skinless chicken breast halves, cut into thin strips (I usually do cubes and not that much chicken), 1 tbs olive oil

    Salad: 8C torn leaf lettuce, 1 (11oz) can mandarin orange segments drained, 1/4C golden raisins.

    Shake dressing ingredients together in jar with tight fitting lid- set aside. In a small bowl combine limeade concentrate and pepper. Add chicken strips; toss to coat. Heat oil in small nonstick skillet over medium-high heat until hot. Add chicken mixture; cook and stir 4 to 6 min or until chicken is lightly browned and no longer pink. Put salad together, top with chicken and drizzle with dressing. (we usually add whatever salad ingredients we have to the salad, ie cucumber, tomato, carrots).
